Obituary

Elizabeth Olson, age 71 of Fargo formerly of Souris, passed away on Tuesday, April 8, 2025 at her home in Fargo.

Elizabeth lone Olson was born January 23,1954 in Bottineau, ND, to lngwall and Mae Olson, the third of four children. She grew up in Souris, ND and graduated from Souris High in 1972.

After High School, she attended North Dakota State University (NDSU) to study Home Economics and graduated in 1977 with a BA degree in Food and Nutrition.

In 1978 she accepted a position as a childcare worker at the Institute of Logopedics, a residential school for handicapped children with communication issues, in Wichita, KS. She remained there for 9 years.

She then returned to NDSU where she completed a degree in Early Childhood Education in 1988. That year she began her career with Merit Care/Sanford Healthcare in Fargo. There she served as an Assistant Infants Teacher in the Hospital's daycare center, enriching the lives of hundreds of young children. In 2010, due to worsening health issues, she reluctantly retired from her childcare career with Meritcare/Sanford Health. In 2019 she moved into Heritage House Senior Housing in Fargo.

Beth was known and loved for baking delicious treats, which she freely shared with residents of her apartment complex as well as friends and family. She joined First Lutheran Church in downtown Fargo in 1990 and was a member of the Cathedral Choir and Heavenly Bells handset choir. She Also volunteered in the Nursery and Sunday School.

Beth was accompanied through much of her life by her beloved cats. Her current cat, Arabesque, was at her side at the time of her passing. Beth is loved and remembered by her many nieces and nephews, whom she was known to spoil with creative presents and lots of treats. She made each of them a quilt when they graduated from High School, personalized with fabrics related to their interests.

Beth was preceded in death by her parents, lngwall and Mae Olson, and brothers David Olson of Plymouth, MN and Jerry Olson of Bremerton, WA.

Beth is survived by her sister, Nadine (Robert) Little of Bottineau, ND, sisters-in-law, Diane and Lisa Olson and many nieces and nephews.
